Buah rambutan segar adl buah dari tanaman rambutan (Nephelium lappaceum Linn) dalam tingkat ketuaan optimal, utuh, segar dan bersih.
Keseragaman kultivar adl keseragaman kenampakan buah rambutan segar dari kultivar tertentu spt: Simacan, Binjai, Lebak Bulus, Rapiah dll. Yg ditandai dg bentuk dan warna buah.
Panjang tangkai adl. ukuran panjang tangkai buah dari ujung yg melekat pd permukaan buah sampai bekas potongan tangkai buah.

Menurut beratnya Buah Rambutan segar untuk masing2 kultivar digolongkan dalam 2 jenis mutu I & II.
